Marsala wine
Description
Marsala wine is a fortified Sicilian wine ranging in color from light gold to amber to deep brown in aged versions; its flavors include notes of dried fruits, caramel, nuts, and vanilla, available in both dry and sweet varieties. Nutritionally, it provides calories from alcohol and sugars, along with small amounts of minerals and polyphenols, which in moderation may support lipid profiles, but one should be mindful of the limitations associated with alcohol and sugar. Culinarily, Marsala is excellent for sauces (e.g., classic chicken/veal marsala), deglazing pans, reductions, marinades, risottos, and desserts, pairing well with mushrooms, meats, aged cheeses, and sweet cakes. An unopened bottle is best stored upright in a cool, dark place; once opened, it should be tightly sealed and refrigerated, consumed within a few weeks (sweeter versions stay fresh longer).
