Description
Water used for gelatin is clear, colorless, and devoid of a distinct taste, making it a neutral carrier for the flavors and colors of desserts and savory jellies. Its only sensory "feature" is purity and transparency, which affect the final appearance of the prepared product. Nutritionally, water provides no calories or macronutrients, and it may contain trace amounts of minerals depending on the source. Its main benefit is hydrating the body, supporting metabolism, thermoregulation, and kidney function. In the kitchen, it plays a key role in "blooming" gelatin powder in cold water and then dissolving the gelatin in hot liquid; it is used for jellies, panna cotta, aspics, and sweet mixtures. Clean, bottled, or filtered water should be stored in a sealed container, and prepared gelatin mixtures should be kept in the refrigerator and used within 24–48 hours.
