Rectified spirit or vinegar
Description
Rectified spirit is a colorless, highly aggressive liquid with a distinct alcoholic smell and a burning taste; vinegar comes in various clear or slightly colored varieties (e.g., wine, apple) and is characterized by a sour, refreshing taste. Both products provide virtually no significant nutrients — spirit is pure ethanol with no energy value beyond calories, while vinegar is low in calories and contains small amounts of minerals and bioactive compounds beneficial for gut flora and glucose metabolism. In the kitchen, spirit is mainly used for making liqueurs, extracts, deactivation and preservation, as well as an ingredient in alcohol for flambéing, while vinegar is versatile in dressings, marinades, preserving vegetables, and balancing flavors in dishes. Store spirit tightly closed, in a cool, dark, and well-ventilated place away from heat sources and children; vinegar is best kept capped in a cool place or in the refrigerator, protecting it from direct light.
