Water (or aquafaba from canned chickpeas)
Description
Water is a colorless, odorless, and tasteless substance, whose only "sensory feature" is freshness; aquafaba from canned chickpeas is a cloudy, straw-colored liquid with a slightly plant-like aroma and a creamy, viscous texture reminiscent of egg whites. Water provides no calories but is essential for hydration and the proper functioning of the body, while aquafaba has very few calories and trace amounts of protein and carbohydrates, may contain sodium from the brine, and simultaneously replaces eggs in plant-based diets. Aquafaba works well as a foamer, emulsifier, and protein substitute in meringues, mayonnaise, mousses, and baked goods, while water is a universal carrier of flavors and the basis for cooking, blending, or diluting. Store water in clean bottles in a cool place; keep aquafaba in the refrigerator for up to 4–5 days or freeze in portions for up to 3 months, preferably using low-sodium cans or draining and seasoning as needed.
