Water or vegetable broth
Description
Water or vegetable broth is a basic ingredient in the kitchen; water is clear and neutral in taste, while vegetable broth has a golden or greenish hue and a delicate, aromatic flavor of vegetables with hints of celery, carrot, and onion. The broth can be clear or slightly cloudy, depending on the preparation method, and usually smells of fresh herbs. Nutritionally, water provides essential hydration without calories, while vegetable broth offers few calories, electrolytes, soluble vitamins, and minerals, and supports digestion and hydration on a light diet. It is a versatile base liquid for soups, risottos, sauces, cooking grains and vegetables, as well as for braising and simmering; it can be easily seasoned to taste. Store water in airtight containers, and cool broth quickly, keeping it in the refrigerator for 3–4 days or freezing it for up to 3 months using airtight containers.
