Brown sugar (muscovado)
Description
Muscovado brown sugar is an unrefined, moist sugar with a dark brown color and sticky texture, characterized by a strong, molasses aroma with hints of caramel and toffee. Its crystals are less uniform than those of refined sugars, which gives it a richer, fuller flavor. From a nutritional standpoint, it contains small amounts of minerals such as iron, calcium, potassium, and magnesium, as well as trace amounts of B vitamins due to the presence of molasses; however, in terms of energy, it is similar to regular sugar, so the health benefits are limited and it should be used in moderation. In the kitchen, muscovado works great in baking (cakes, gingerbread, brownies), barbecue sauces, marinades, caramelizations, toffee desserts, and cocktails, where it adds moisture and depth of flavor. It should be stored in an airtight container in a cool, dry place away from direct light; to prevent it from drying out, a piece of bread or a special ceramic sugar disc can be added, and for longer storage, portions can be kept in the freezer.
