Description
Mustard seeds, available in yellow, brown, and black varieties, are small and round with a smooth skin; they have a subtly nutty flavor when whole, while crushing them releases an intense, spicy note with a sharp, peppery finish. They have a pleasant aroma that enhances dishes, which is why they are often added optionally to highlight flavor. Nutritionally, mustard seeds provide plant protein, fiber, healthy fats, and minerals such as magnesium, phosphorus, and iron, as well as phytochemical compounds with potential antioxidant properties.
