Green pesto

🌱 Vegetarian

Description

Green pesto, traditionally made from basil, olive oil, pine nuts, garlic, and pecorino or parmesan cheese, has an intensely green color, a smooth yet slightly grainy texture, and a fresh, herbal aroma with hints of garlic and nuttiness, along with the salty sharpness of the cheese. It is a concentrated source of flavor that instantly enhances dishes and adds a distinctive character. Nutritionally, pesto provides healthy monounsaturated fats from the oil, unsaturated fatty acids and vitamins from the nuts and basil, as well as protein and calcium from the cheese; it also contains antioxidants and vitamins A and K, which support the circulatory system and have anti-inflammatory properties. It pairs perfectly with pasta, salads, sandwiches, sauces, marinades, pizza, and roasted vegetables. It should be stored in an airtight container in the refrigerator, preferably with a thin layer of oil on the surface to prevent darkening, and used within 5–7 days or portioned and frozen (in cubes) for several months.
