Description

Green pesto, traditionally made from basil, olive oil, pine nuts, garlic, and pecorino or parmesan cheese, has an intensely green color, a smooth yet slightly grainy texture, and a fresh, herbal aroma with hints of garlic and nuttiness, along with the salty sharpness of the cheese. It is a concentrated source of flavor that instantly enhances dishes and adds a distinctive character. Nutritionally, pesto provides healthy monounsaturated fats from the oil, unsaturated fatty acids and vitamins from the nuts and basil, as well as protein and calcium from the cheese; it also contains antioxidants and vitamins A and K, which support the circulatory system and have anti-inflammatory properties.
