Additional egg yolk
Description
An additional yolk is an intensely yellow, creamy part of an egg with a rich, slightly buttery flavor and a velvety texture, which significantly enhances the color and structure of dishes. It contains concentrated nutrients: healthy fats, protein, vitamins A, D, E, and K, as well as B vitamins, a lot of choline, and lutein and zeaxanthin beneficial for vision; it is also a source of iron, selenium, and phosphorus. Due to its high cholesterol content, it is advisable to use it in moderation in a balanced diet. An additional yolk works perfectly for thickening sauces, mayonnaises, and creams, in desserts such as custards and ice creams, as well as in baked goods, pasta, and bread for greater flakiness and moisture. Store in the refrigerator in an airtight container for 24–48 hours; for longer storage, it can be frozen after being whisked with a bit of sugar or salt (to prevent gelation), labeling the date and thawing in the refrigerator before use.
