Description
Egg yolk for brushing is a thick, creamy-golden emulsion with a subtly buttery, rich flavor and a shiny finish after baking. It gives baked goods an appetizing, glossy crust and intense color, and when diluted with water or milk, the degree of shine and browning can be adjusted. Nutritionally, the yolk is a concentrated source of fats, proteins, vitamins A, D, E, and K, as well as choline, lutein, and minerals such as phosphorus and iron, which support brain function, eye health, and a sense of fullness. In the kitchen, it is mainly used as an "egg wash" for brushing rolls, tarts, cakes, and pastries, for sealing the edges of dumplings, and for giving a golden crust. To maintain freshness, store yolks in an airtight container in the refrigerator and use within 24–48 hours; for longer storage, they can be frozen after adding a pinch of salt or sugar.
