Capers (optional)
Description
Capers are small, greenish buds from the caper bush, most commonly sold in a salt-vinegar brine. They have an intense, salty-sour, slightly floral aroma with a spicy umami note, which is why they are often an optional ingredient that enhances the flavor of dishes without overpowering them. Nutritionally, capers are low in calories and provide small amounts of vitamins and minerals, such as vitamin K, iron, and calcium, as well as antioxidant compounds (e.g., quercetin). Due to the high sodium content in the brine, it is advisable to use them sparingly. Culinary uses include Mediterranean dishes: fish, sauces (e.g., piccata), salads, pastas, pizza, and dressings; they add distinctiveness and balance fats and acids. Once opened, store capers in the refrigerator submerged in their original brine, and they can be rinsed before use to reduce saltiness; unopened jars are stable outside of refrigeration.
