The syrup, made with real pumpkin puree, is enriched with a bouquet of spices – cinnamon, ginger, and nutmeg – that envelop the senses and create a blissful mood. Visually, the drink is stunning: the amber color of the coffee transitions into orange tones of pumpkin, topped with a fluffy cap of milk foam, often decorated with whipped cream and a sprinkle of cinnamon. It’s the perfect choice for a chilly afternoon, a gathering with friends, or a moment of relaxation with a book. Serve hot to fully enjoy its deep aroma and flavor.

Preparation of pumpkin syrup

In a small saucepan with a thick bottom, place the pumpkin puree, brown sugar, water, and all the dry spices: cinnamon, ginger, and nutmeg. Use a silicone spatula or wooden spoon to initially mix the ingredients, creating a uniform, thick paste.

A saucepan with a thick bottom is key to preventing the sugar from burning. If you don't have ready-made purée, you can make it by baking hokkaido pumpkin until soft (about 30-40 min at 180°C), and then blending the flesh into a smooth mass.

Place a saucepan over medium heat and heat the mixture, stirring constantly, until the sugar is completely dissolved and the syrup begins to gently bubble at the edges. Reduce the heat to low and cook for about 5-7 minutes, until the syrup slightly thickens. Remove from heat, add the vanilla extract, and mix well. Set aside to cool slightly.

Remember that the syrup will thicken even more as it cools. Do not cook it too long, or it will become hard like caramel. The finished, hot syrup should have the consistency of thin honey.

Prepare two strong servings of espresso. You can use a pressure coffee machine, a moka pot, or brew very strong instant coffee. Each serving should have a volume of about 30 ml. Freshly brewed, hot coffee is the key to the perfect taste and aroma.

If you don't have an espresso machine, use a moka pot – it will give you an intense brew similar to espresso. It's important that the coffee is hot when you combine it with the milk, which will ensure the final drink is at the right temperature.

Heat the milk in a small saucepan over medium heat until hot but not boiling (small bubbles should appear at the edges, and the temperature should reach about 65-70°C). Then froth the milk. If you have a milk frother, use it to achieve a thick, creamy foam. If not, pour the hot milk into a clean jar (filling it no more than halfway), seal it tightly, and shake vigorously for 30-45 seconds until it doubles in volume and forms foam.

Be careful not to boil the milk, as it will lose its natural sweetness and be harder to froth. The jar method is surprisingly effective, but remember to use an oven mitt, as the jar will be very hot!

It's time to assemble the drink. Prepare two tall, transparent glasses or large mugs (with a capacity of about 300 ml). Pour 2-3 tablespoons of the prepared pumpkin syrup into the bottom of each glass. Then, very carefully, pouring down the inner wall of the glass or over the back of a spoon, pour one portion of hot espresso into each. Finally, holding back the foam with a spoon, pour in the hot milk, and top it off with a thick layer of milk foam.

To achieve a nice layered effect, pour the ingredients slowly and carefully. You can gently warm the glasses before pouring the drink by filling them with hot water for a moment and then pouring it out – this will help the latte maintain the perfect temperature for longer.

Decorate your latte. If using, place a large dollop of whipped cream on top of the milk foam. Lightly sprinkle with a pinch of cinnamon to enhance the aroma. For an additional visual and aromatic effect, you can add a cinnamon stick to the glass. Serve immediately while it's hot and most aromatic.

Whipped cream from a spray can is quick, but the best result comes from whipping 30% or 36% cream yourself with a bit of powdered sugar. Additionally, you can sprinkle the top with grated dark chocolate or ready-made coffee spice sprinkle.

Pumpkin Spice Latte was introduced by Starbucks in 2003 and quickly became a cultural phenomenon, symbolizing the arrival of autumn in many countries. Interestingly, in the first versions of the drink... there was no pumpkin at all! Real pumpkin puree was added to the recipe only in 2015.

Serve immediately after preparation in tall, clear glasses to showcase the beautiful layers of the drink. The glasses can be warmed beforehand by filling them with hot water for a minute. For decoration, in addition to whipped cream and cinnamon, you can use a drizzle of caramel or grated dark chocolate.

Ready latte should be consumed immediately – it is not suitable for storage. However, homemade pumpkin syrup can be stored in a tightly sealed jar in the refrigerator for up to 7-10 days. This way, you can enjoy your pumpkin latte every day without the need to make syrup each time.
