Reduce the heat to low and cook for about 5-7 minutes, until the syrup slightly thickens. Remove from heat, add the vanilla extract, and mix well. Set aside to cool slightly.
Latte Composition
Prepare two strong servings of espresso. You can use a pressure coffee machine, a moka pot, or brew very strong instant coffee. Each serving should have a volume of about 30 ml. Freshly brewed, hot coffee is the key to the perfect taste and aroma.
Heat the milk in a small saucepan over medium heat until hot but not boiling (small bubbles should appear at the edges, and the temperature should reach about 65-70°C). Then froth the milk. If you have a milk frother, use it to achieve a thick, creamy foam. If not, pour the hot milk into a clean jar (filling it no more than halfway), seal it tightly, and shake vigorously for 30-45 seconds until it doubles in volume and forms foam.
It's time to assemble the drink. Prepare two tall, transparent glasses or large mugs (with a capacity of about 300 ml). Pour 2-3 tablespoons of the prepared pumpkin syrup into the bottom of each glass. Then, very carefully, pouring down the inner wall of the glass or over the back of a spoon, pour one portion of hot espresso into each. Finally, holding back the foam with a spoon, pour in the hot milk, and top it off with a thick layer of milk foam.
