Preparation steps

Rosemary syrup

Prepare rosemary syrup: in a medium saucepan, place 150 g of sugar and 150 ml of water. Heat over medium heat, stirring with a wooden spoon, until the sugar completely dissolves (this usually takes 3-5 minutes). Add 8 g of fresh rosemary needles (from the remaining 10 g), reduce the heat to low, and simmer gently for 8 minutes to allow the water to absorb the aroma. After this time, remove the saucepan from the heat and let the syrup cool for 15-20 minutes, then strain into a clean bottle through a fine mesh sieve - do not discard the rosemary sprigs, they can be used for decoration.

Use a saucepan with a diameter of about 18-20 cm and a fine mesh strainer. Do not cook the syrup for too long (more than 10 minutes) — the rosemary aroma will become bitter. The syrup should be clear and (after cooling) have a pleasant herbal aroma.

Cooling the ingredients

Chill the juices and aquafaba: place the bottles of pomegranate juice and blood orange juice, as well as the can of aquafaba, in the refrigerator for at least 15 minutes — the drink works best with chilled ingredients.

For cooling, use a space in the refrigerator, not the freezer. Chilled ingredients will help achieve a better foam and retain carbonation after adding soda water.

Meringue (aquafaba)

Whip the aquafaba into a foam: pour 120 ml of chilled aquafaba into a clean, dry bowl. Use a hand mixer or a stand mixer with a whisk and whip on high speed for 3-5 minutes until the aquafaba becomes light, increases in volume, and forms a stiff, glossy foam. For stabilization, you can add 1 teaspoon of chilled rosemary syrup (about 5 g) and whip for another 20-30 seconds.

Use a metal or glass bowl and clean whisks. The bowl should be cold — place it in the refrigerator for a few minutes beforehand. Note: aquafaba does not behave exactly like egg white, but it should achieve a thick foam similar to egg white.

Basic fruit mix

Prepare the drink base: in a large pitcher, mix 400 ml of pomegranate juice, 200 ml of blood orange juice, and 60 ml of lime juice. Add 40 ml of prepared rosemary syrup (you can use less if you prefer it less sweet). Stir with a bar spoon or a long spoon for 15-20 seconds until the ingredients are combined. Taste the mixture — if it's too sweet, add 10-20 ml of lime juice, if it's too sour, add up to 10 ml of syrup.

Use a jug with a capacity of at least 1 liter. Stir gently to avoid frothing the aquafaba yet — frothing will happen separately.

Preparing the glass

Chill the glasses: fill them with crushed ice for 2-3 minutes to cool the inside (not too long, so the ice doesn't melt). After 2-3 minutes, discard the ice and add a thin layer of crushed ice (about 50 g per glass) to the bottom of each glass.

Use tall, transparent cocktail glasses (e.g., Collins) or elegant cocktail glasses. Chilled glass helps maintain the layers and bubbles.

Layering the drink

Create a stunning layer: first, very slowly and using a spoon turned upside down (or simply pouring along the back of the spoon), pour 100 ml of the pomegranate-orange mixture into each glass — this will create the bottom, intense layer. Then, carefully add 100 ml of soda water to each glass, ensuring a clear boundary between the colors. If you want a deeper gradient effect, add the sparkling water gradually, allowing the liquids to settle.

Pour slowly, keeping the spoon close to the surface of the drink — this will reduce the impact and allow for beautiful layering. If the layers mix, chill the drink for a few more minutes and try again.

Finishing with foam and decoration

Gently place 30 g of whipped aquafaba on top of each drink (use a spoon — lay the foam just above the surface, do not mix it with the layers). Decorate with a sprig of fresh rosemary (use the remaining 2 g) and, optionally, sprinkle with a few pomegranate seeds (about 20 g per glass). Finally, add a very delicate pinch of edible silver glitter in the center of the foam for a 'sparkling' effect.

Use a large tablespoon or a small ladle to apply the foam. Make sure the foam is stiff so that it doesn't collapse immediately. Additionally, you can add pomegranate seeds to enhance the flavor and texture.

Serve immediately: include a small spoon or stirrer for each guest. Serve the drink on a tray with a small bowl of extra pomegranate seeds on the side, so guests can add them to their liking.
