Crushed ice
Description
Crushed ice is a neutral-tasting, odorless ingredient with a cooling, pleasantly crunchy feel and appearance made up of small, irregular, transparent flakes resembling snow. As practically pure water, it provides no calories or macronutrients, but it aids hydration, quick regulation of body temperature, and can soothe swelling or skin irritations; however, it does not replace a source of nutrients. Crushed ice has universal applications in bars and kitchens — ideal for cocktails, drinks, granitas, cold beverages, and smoothies, for serving seafood, desserts, and salads, as well as for presenting dishes that require quick cooling. It should be stored in the freezer in an airtight bag or container to avoid clumping and absorbing odors; it is best prepared fresh, used quickly after thawing, and always ensure the cleanliness of the water and crushing equipment.
