Thoroughly wash the apples and pears under running water, then dry them with a paper towel. You don't need to peel them - the skin contains a lot of flavor and pectin, which will give the drink body. Cut each fruit into quarters and use a small knife to remove the cores. Then cut the quarters into smaller pieces, e.g., into cubes with a side of 2 cm. Peel the ginger with a teaspoon (this is the easiest way to remove the thin skin) and slice it into thin slices about 2-3 mm thick.

Use a large cutting board to have enough space. Use a sharp knife carefully. Peeling ginger with a teaspoon allows you to remove just the skin, minimizing the loss of flesh.

Cooking and serving

In a large pot with a thick bottom (minimum 3 liters capacity), place the chopped apples, pears, and slices of ginger. Add the cinnamon sticks and cloves. If you are using optional ingredients, add the star anise and freshly grated orange zest now for extra aroma.

A pot with a thick bottom prevents the fruits from burning and ensures even heat distribution. Make sure the pot is large enough to hold the fruits and water without the risk of boiling over.

Pour all the ingredients into a pot with 1200 ml of filtered water. Place the pot on the stove over medium heat. Cover the pot with a lid and bring everything to a boil. When you notice that the water starts to bubble vigorously, reduce the heat to the minimum.

Covering the pot will speed up the cooking process and prevent excessive evaporation of water. Watch the pot as it comes to a boil to prevent the liquid from overflowing.

Cook the drink over very low heat for about 25 minutes. The liquid should only gently 'flicker' (slowly releasing small bubbles) and not boil vigorously. During this time, the fruits will completely soften, and the spices will release their deep aromas that will fill the entire kitchen. The drink will take on a beautiful amber color.

The key to a clear and aromatic drink is slow cooking, which allows for deep flavor extraction. Cooking too vigorously can make the drink cloudy and cause the fruits to break down.

Remove the pot from the heat. Prepare a second container (e.g., a jug or bowl) and place a fine-mesh strainer over it. Very carefully pour the contents of the pot through the strainer to separate the clear liquid from the fruits and spices. You can gently press the fruits with a spoon against the strainer to extract as much juice and flavor as possible.

Be careful, the drink is very hot. Use kitchen gloves for safety. To achieve perfectly clear liquid, you can line the strainer with a piece of clean cheesecloth.

To the still hot, strained beverage, add honey or maple syrup if you're using it. Start with one tablespoon, mix thoroughly until completely dissolved, and taste. Add more if the drink is not sweet enough for you. Serve the elixir immediately, hot, in mugs or thick glass cups, garnished with a slice of fresh orange or an extra cinnamon stick.

Honey added to a drink at a temperature above 40-50°C loses some of its health properties, but retains its flavor. If you care about the properties of honey, let the drink cool slightly before adding it. Adjust the sweetness of the drink according to your own preferences.
