Description
Whole cloves are small, dark brown buds shaped like nails, with an intense, warm, slightly sweet and spicy aroma, featuring a distinct note of eugenol, which gives a peppery, spicy aftertaste. They resemble small nails: a rounded head and a slender "pin," which makes them easy to identify and remove from dishes. Nutritionally, cloves provide antioxidants and compounds with anti-inflammatory and antibacterial properties; eugenol may aid digestion, alleviate nausea, and act as a local pain reliever. Their culinary use is versatile: they complement meat dishes, marinades, stews, rice, soups, and compotes, as well as baked goods, spiced beverages, and spice blends. Cloves are best stored whole, in an airtight container, in a cool, dark, and dry place, away from moisture and light; whole buds retain their aroma much longer than ground spice.
