Preparation steps

Sugar syrup

Weigh 150 g of sugar and 150 ml of water (part of the prepared water). Pour them into a medium saucepan with a thick bottom. Place over medium heat and stir with a wooden spoon until the sugar completely dissolves (about 3-4 minutes). When the syrup starts to simmer lightly, reduce the heat and cook for another 1-2 minutes until the syrup becomes clear. Remove from heat and set aside to cool slightly (about 10 minutes).

Use a saucepan with a diameter of 20-24 cm and a wooden spoon. Do not bring the syrup to a strong boil for more than 2 minutes - caramelization will change the flavor. The syrup must be clear, without sugar crystals on the walls.

Lemon juice

Wash the lemons with warm water and dry them. On a cutting board, cut each lemon in half. Squeeze the juice using a manual or electric juicer into a large measuring cup — you should get about 180-200 ml of juice from 3 medium lemons. Before squeezing, you can gently roll the lemons under your hand on the countertop to release more juice.

Use a plastic or metal juicer. If you don't have a juicer, squeeze manually using a fork to extract any remaining juice. Be careful of the seeds — strain the juice through a sieve if any seeds appear.

Mixing and cooling

Pour the cooled sugar syrup into a pitcher (with a capacity of at least 1.5 l), add the freshly squeezed lemon juice and the remaining cold water (about 850 ml, so that the total amount of water with the syrup is 1000 ml). Stir with a spoon at least 30 cm long for 20-30 seconds to combine the ingredients. Taste the drink and adjust if necessary: if it's too sour — add a tablespoon of syrup or 15-30 ml of water; if it's too sweet — add 30-60 ml of water. Add the mint leaves (set a few aside for decoration) — first place them in your hand and gently bruise them (known as muddling) to release the aroma, then toss them into the pitcher.

Use a glass or plastic pitcher with a capacity of at least 1.5 l. Use the end of a wooden spoon to crush the mint. Do not crush the leaves too hard, as the drink will become bitter — a few gentle taps are enough.

Cooling

Place the pitcher in the refrigerator for at least 20-30 minutes to allow the flavors to meld. If you need a quick chill, add ice cubes just before serving instead of putting the pitcher in the freezer — this will prevent the drink from becoming watered down.

If you need to prepare lemonade in advance, store it in the refrigerator without ice for up to 24 hours. Add ice only before serving.

Serving

Fill the glasses with ice cubes (if using). Place a slice of lemon and a sprig of mint in each glass. Pour lemonade to 3/4 full, and if you want to add some bubbles — pour 80-100 ml of cold sparkling water into each glass. Serve with a paper straw and a small plate for the lemon slices.

The best vessel is a wide highball glass or a 300-350 ml glass. Additionally, you can add a few slices of cucumber for an interesting, fresh aroma (optional).

Store in the refrigerator in a closed pitcher for up to 48 hours. The syrup can be prepared in advance and stored in the refrigerator for up to 7 days in a tightly sealed jar. Do not add ice before long-term storage — it will dilute the drink.
