Description
The protein base from leftovers is a flexible, intense ingredient with a rich umami character; its appearance can be thick and uniform, ranging from creamy beige to deeper browns depending on the raw materials used, with a noticeable texture of small pieces. Its flavor can easily be adjusted with spices, lemon juice, or herbs, making it a versatile carrier of aromas.
