Soured milk
Description
Soured milk is a creamy, slightly sour product with a smooth or slightly lumpy consistency and a whitish-cream color; the taste is mildly tangy, fresh, and refreshing, with a velvety aftertaste of fermented lactose. Depending on the fat content, it can be thinner or thicker, but it is always pleasantly creamy. Nutritionally, soured milk provides protein, calcium, and B vitamins, as well as beneficial lactic acid bacteria cultures that support gut flora and digestion. It works well as a base for cold soups, sauces, marinades, baked goods, and as an addition to grains and potatoes; it pairs nicely with herbs, cucumber, and spices. Store in the refrigerator in a tightly sealed container and use within a few days; discard the product if it has an unpleasant smell or visible mold.
