Description
Bok choy is a crunchy leafy green vegetable with light green leaves and meaty white stalks, featuring a mild, slightly sweet, and fresh flavor with a hint of radish. It resembles a combination of celery and spinach, maintaining its structure well after brief cooking. It is low in calories and nutritious: providing vitamins A, C, and K, folic acid, calcium, potassium, and fiber, as well as antioxidants that support immunity, bone health, and the digestive system. In the kitchen, it works well in stir-fries, soups, braised, steamed, as an addition to noodles, rice, tofu, and meats, and raw in salads.
