Description
Beet greens are young beets with tender, light green leaves and red roots; the flavor is subtly earthy with a hint of sweetness and a fresh, slightly tangy leafy note. They look impressive — the contrast of the red bulbs and green shoots encourages their use both cold and warm. In the kitchen, they serve as a base for classic beet soup, an addition to salads, green smoothies, risotto, or braised vegetables, and the leaves can be used similarly to spinach. Beet greens are low in calories, rich in vitamins A, C, and K, folic acid, iron, magnesium, fiber, and the antioxidant betalains, which support circulation and have anti-inflammatory properties. Store them unwashed in the refrigerator, preferably in a perforated bag, separating the leaves from the roots, which can be stored separately; use within 3–5 days or blanch and freeze to extend freshness.
