Cooking Brandy
Description
Cooking brandy is a light golden to amber distillate with a rich, fruity-caramel aroma featuring notes of oak and vanilla; the texture is light, and the flavor is concentrated, often slightly sweeter than table brandy, sometimes with added sugar or flavors. As an alcoholic product, it primarily provides energy (calories from alcohol) and small amounts of phenolic compounds derived from grapes and barrels, which is why health benefits are limited and pertain only to very moderate alcohol consumption. In the kitchen, cooking brandy enhances sauces, flambéing, desserts (e.g., fruit sauces, crème brûlée), braised meats, and marinades, adding depth of flavor and aroma; the alcohol partially evaporates during cooking, leaving an intense note. It should be stored tightly closed in a cool, dark place away from heat sources; once opened, it is best used within a few months to maintain optimal aroma.
