Description

Podhale bryndza is a soft, white cheese with a dense, slightly crumbly texture, intensely salty and spicy flavor with a delicate acidity and a hint of sheep aroma. It resembles a moist, creamy paste or crumble, spreads easily, and gives dishes a distinctive character. Nutritionally, it is a good source of protein, calcium, and B vitamins, as well as beneficial lactic cultures, which support bones, muscles, and gut flora; however, moderation is advised due to its fat and salt content. In the kitchen, bryndza works great as a spread for bread, filling for dumplings or croquettes, an addition to salads, sauces, and casseroles, as well as an ingredient in traditional potato dishes. Store it in the refrigerator in an airtight container or in its original brine, use within a few days to a week, and before serving, take it out for a moment to reach room temperature and release its aroma.
