Dark muscovado sugar
Description
Dark muscovado sugar is unrefined cane sugar with a moist, sticky consistency and a deep, dark brown color. Its flavor is intensely molasses-like, with distinct notes of caramel, toffee, and a slight bitterness, which gives dishes a richer, more complex flavor profile than white sugar. Nutritionally, muscovado contains trace amounts of minerals such as iron, calcium, potassium, and magnesium, as well as molasses compounds with antioxidant properties; however, it is energetically similar to other sugars, so it should be used in moderation. In the kitchen, it works excellently in baking, cookies, barbecue sauces, marinades, desserts, and as an addition to coffee and oatmeal, enhancing the flavor and moisture of dishes. Store it in an airtight container in a cool, dry place; if it hardens, you can soften it with a piece of apple or a slice of bread left for a few hours.
