Dark rum
Description
Dark rum is an aromatic spirit with a color ranging from deep amber to mahogany, with a thicker consistency than white rum. The nose and flavor are dominated by notes of molasses, caramel, toffee, vanilla, oak, and spices, often with a subtle hint of smoke resulting from aging in barrels. It is fuller and sweeter than light rum, making it an attractive culinary and cocktail ingredient. Nutritionally, rum is a high-calorie alcohol (about 220–250 kcal/100 ml) with low nutritional value; it may contain trace amounts of minerals from the raw material and barrels, and sometimes added sugar. Moderate consumption can be part of a lifestyle, but excessive alcohol is harmful. Dark rum pairs well with desserts, sauces, glazes, meat marinades, Caribbean dishes, flambéing, and classic cocktails. It should be stored in a closed bottle, in a cool, dark place away from heat sources; once opened, it remains stable for a long time, although the aroma may mellow over time.
