Description
Trout or salmon roe consists of small, shiny beads ranging in color from orange to ruby, with a lightly salted, buttery-fish flavor and a subtle umami note. Its firm, popping texture adds a contrast of texture and elegance to dishes; it pairs perfectly as a finishing touch on blinis, sandwiches, and tartines, with cheese spreads or butter, as well as a topping for sushi, pasta, salads, and delicate lemon-cream sauces. Roe is rich in high-quality protein, polyunsaturated omega-3 fatty acids (EPA and DHA), vitamins D and B12, and minerals such as selenium and iodine, which support the function of the heart, brain, and immune system. It should be stored in a cool place (0–4°C); an opened package should be consumed within 24–48 hours. It can be frozen in airtight containers, keeping in mind that the texture may slightly change after thawing.
