Extra virgin olive oil is a cold-pressed oil with a greenish-golden color, the aroma of fresh olives with hints of grass and fruit, and a characteristic light bitterness and spicy finish. Its full flavor enhances salads, dips, bread, and cheeses, pairs perfectly with vegetables, fish, or pasta, and at moderate temperatures, it is also suitable for gentle frying and quick sautéing. Nutritionally, it is rich in monounsaturated fatty acids (mainly oleic acid), vitamin E, and polyphenols with antioxidant properties, which help protect the cardiovascular system and reduce inflammation. To maintain quality, store the oil in a sealed, dark bottle away from light and heat sources; once opened, it is best used within a few months and to buy smaller, fresh quantities.
