Fresh parsley
Description
Fresh parsley has an intense, slightly peppery and herbal flavor, with bright green, slightly shiny leaves and thin stems that add freshness and a decorative touch to dishes. It is low in calories, rich in vitamins K, C, and A, as well as folic acid, minerals such as iron and calcium, and antioxidants (flavonoids), which support the immune system, bone health, digestion, and have anti-inflammatory effects. In the kitchen, parsley goes well with almost everything: soups, salads, sauces, fish and poultry dishes, and as a finishing touch for pasta and potatoes, as well as in fresh pestos and marinades. To preserve its aroma and moisture, store it in the refrigerator wrapped in a slightly damp paper towel in a bag or in a glass of water like a bouquet; chopped parsley can also be frozen in portions with olive oil. Wash and chop just before serving.
