Description
Dark chocolate (optional chips) is characterized by an intense, slightly bitter taste with a distinct cocoa note and subtle acidity, and its color ranges from dark brown to almost black; optional chips add a pronounced texture and bursts of flavor. The structure can be smooth or have a typical "snap," and the aroma is deep, earthy, and slightly roasted. Nutritionally, dark chocolate is a concentrated source of fat and calories, but it also contains minerals such as magnesium, iron, and copper, as well as polyphenols (flavonoids) with antioxidant properties that support heart health and improve mood when consumed in moderation. In the kitchen, it works great in baking, glazes, ganache, mousses, hot chocolate, and as a flavor contrast to fruits, cheeses, and meat sauces. It should be stored in a tightly sealed package in a cool, dry place (ideally 15–18°C), away from strong odors and light; avoid sudden temperature changes, and if it needs to be chilled, do so in the package to prevent condensation.
