Description
Milk chocolate couverture is characterized by a smooth, creamy texture and a light brown, shiny sheen after tempering, with a flavor that is sweeter and more milky than dark chocolate, featuring subtle vanilla-caramel notes. Due to its higher cocoa butter content compared to regular chocolate, it melts perfectly and provides a silky finish. Nutritionally, it is a source of energy, fat, and sugars, and provides small amounts of calcium and magnesium; it also contains compounds that can improve mood, although due to its calorie content and sugar levels, it should be consumed in moderation. Milk chocolate couverture is ideal for tempering, coating, and shaping pralines, preparing ganache, glazes, cake decorations, and creamy fillings. It should be stored in a dry, cool place with a stable temperature (ideally 15–18°C), in an airtight container, away from odors and moisture; if cooling is necessary, allow it to return to room temperature before use to avoid "bloom."
