Shaggy ink cap

🌱 Vegetarian 🌿 Vegan

Description

The shaggy ink cap is an impressive mushroom with a white, fibrous cap resembling a wig and a thin, cylindrical stem; young fruits have a delicate, slightly sweet taste and a meaty texture, while in maturity they break down into an inky black liquid. It is valued for its subtle flavor and decorative appearance, but it should be harvested and consumed when young, before autolysis begins. Nutritionally, it provides few calories, but it does contain protein, fiber, B vitamins, and minerals such as potassium, phosphorus, and selenium, as well as antioxidants and polysaccharides beneficial for immunity. In the kitchen, it works well when sautéed, fried with butter or oil, as an addition to omelets, risottos, soups, and sauces; it pairs well with delicate meats and pasta. Store in the refrigerator in a paper bag and use within a few days; do not wash before storing, and if it needs to be kept longer, a brief sauté and freezing is best. Exercise caution if there are doubts about the species or condition of the mushroom.
