Description
Stale bread roll has a hard, slightly golden crust and a dry, dense crumb with a subtly wheat-like, neutral flavor; after refreshing in the oven, it regains a pleasant crunch. Nutritionally, it is mainly a source of easily digestible carbohydrates, contains a moderate amount of protein and a small amount of fat, and in its whole grain version, it also provides fiber and trace elements typical of flour. It serves as a quick source of energy and—in appropriate portions—fits into a balanced diet, especially when used instead of highly processed snacks. Stale bread rolls are worth using to prepare croutons, breadcrumbs, fillings, casseroles, bread pudding, or as an ingredient in meatballs; they absorb liquids well, making them ideal for breading and stewed dishes. Store in a cool, ventilated place in a paper bag or cupboard; for longer storage, freeze whole or as breadcrumbs. To restore freshness, briefly heat in the oven or moisten and bake.
