Description
Fresh coriander (leaves) has an intense, citrusy-herbaceous aroma with a slight peppery note, and its flat, light green leaves give dishes a distinctive, decorative appearance. The taste can be perceived differently by different people — from refreshing to slightly soapy in some cases due to genetic sensitivities. The leaves are low in calories, rich in vitamins A, C, and K, as well as folates and minerals such as potassium and iron, and they also contain antioxidants with anti-inflammatory properties. In the kitchen, coriander pairs well with dishes from Mexican, Asian, and Middle Eastern cuisines, in salsas, chutneys, soups, salads, and marinades, often added just before serving for freshness. To prolong freshness, store the leaves wrapped in a damp paper towel in a closed container in the refrigerator or in a vase with water, and freeze any excess in oil or as ice cubes.
