Description
Red onion has an intense, slightly sharp yet sweet flavor and a characteristic purplish-red color of the skin with white-pink cross-sections, which add distinctiveness and an impressive appearance to dishes. Its flavor softens when cooked, while raw it provides a pleasant crunch and aroma. It is low in calories, rich in fiber, vitamin C, B vitamins, and minerals, and the flavonoids (e.g., quercetin) and sulfur compounds it contains have anti-inflammatory, antioxidant effects and support the cardiovascular system and immunity; inulin supports gut flora. Red onion pairs well with salads, salsas, sandwiches, burgers, for pickling, grilling, and baking, where it enhances the flavor of meat, fish, and cheeses. Store it in a cool, dry, and well-ventilated place away from potatoes; whole bulbs can last several weeks, while cut ones should be kept in the refrigerator in an airtight container for 3–5 days or preserved.
