Red currant
Description
Red currants are small, shiny fruits in characteristic clusters, with a translucent, intense red color; their taste is distinctly tart, refreshing, and aromatic, with a slight astringency, making them an excellent counterbalance to sweeter ingredients. From a nutritional standpoint, currants provide vitamins C and K, fiber, potassium, and antioxidants (including anthocyanins), while being low in calories, which supports immunity, vascular health, and digestion, and has beneficial effects on skin condition. In the kitchen, they are great for jams, jellies, sauces for meats (especially game and poultry), baked goods, mousses, and salads, as well as an impressive addition to drinks and desserts. Store unwashed in the refrigerator in a breathable container and use within a few days; for longer freshness, it is best to freeze them spread out on a tray or turn them into preserves and compotes.
