Lime
Description
Lime is a small, juicy fruit with a thin, green skin and an intensely sour, fresh flavor with a hint of bitter peel. The flesh is light green, sometimes slightly sweeter than the scent suggests, and the aroma is citrusy and very pronounced, making lime an excellent addition to drinks, sauces, marinades, and desserts, as well as an ingredient in Asian, Mexican, and Mediterranean cuisine. Lime is low in calories, rich in vitamin C, antioxidants, and fiber, and contains small amounts of potassium and B vitamins, which support immunity, aid iron absorption and digestion, and have a refreshing effect on the skin. Fresh limes can be stored at room temperature for a few days, and in the refrigerator in a sealed bag or container for up to 2–4 weeks; cut pieces are best used within a few days or the juice can be frozen in ice cube trays.
