Description
Dorado, also known as royal dorado, is a medium-sized fish with an oval, silvery body and a distinctive golden spot near its eyes. The flesh is white, firm, and delicate, with a subtly sweet, oceanic flavor that absorbs the aromas of herbs and citrus well. It is a good source of high-quality protein, unsaturated omega-3 fatty acids, vitamins B12 and D, and trace elements such as selenium and iodine, which support heart health, cognitive functions, and metabolism. Culinary uses of dorado include grilling and roasting whole, preparing in salt or steaming, and serving with simple Mediterranean accompaniments; it pairs wonderfully with olive oil, lemon, rosemary, tomatoes, and young potatoes. Fresh dorado is best stored chilled on ice or in the coldest part of the refrigerator and consumed within 1–2 days; longer storage requires airtight freezing (for several months) and slow thawing in the refrigerator.
