Description
Fresh baker's yeast is a resilient, creamy-beige block with a delicate, yeasty, slightly sweet aroma reminiscent of fresh bread, and a subtle, non-bitter taste that disappears after baking. They are living cells of Saccharomyces cerevisiae, easy to crumble and dissolve in warmer liquids during dough rising. The nutritional values of fresh yeast include protein, B vitamins (especially B1, B2, B3, and B9), as well as minerals like chromium and potassium; they support energy metabolism and cellular synthesis, although they should be consumed in moderation. Typical uses include rising yeast doughs, bread, rolls, pizza, and sweet pastries, as well as thickening fillings and flavoring spreads.
