Pumpkin
Description
Pumpkin is a fleshy, usually orange fruit with a sweet-nutty flavor and a smooth, sometimes ribbed skin, available in various shapes and sizes. It is low in calories, rich in fiber, beta-carotene (a precursor to vitamin A), vitamin C, potassium, and antioxidants, which support eye health, immunity, and digestion, as well as help with weight control and blood pressure regulation. In the kitchen, pumpkin works well in soups, creams, purees, cakes, bakes, and curries, as well as an ingredient in salads and fillings; roasted seeds make a valuable snack. Whole, uncut pumpkins are best stored in a dry, cool, and well-ventilated place, while cut pumpkin should be kept in the refrigerator in an airtight container and used quickly; cooked puree can be frozen.
