Cannellini beans
Description
Cannellini beans are large, cream-white seeds with a slightly elongated, irregular shape and a delicate, smooth skin. Their flavor is subtle, buttery, and slightly nutty, making them easily absorb the aromas of spices and herbs. They are rich in plant protein, fiber, complex carbohydrates, as well as B vitamins, folic acid, and minerals such as iron, magnesium, and potassium, which support feelings of fullness, gut health, blood sugar stabilization, and cholesterol reduction. In the kitchen, cannellini beans work well in soups, stews, salads, spreads, and creamy purées; they pair nicely with garlic, rosemary, lemon, tomatoes, and olive oil. Store dry beans in a dry, cool place in airtight containers, soaking and cooking them until tender before use; drain and rinse canned beans before use, and store opened cans in the refrigerator in an airtight container for up to 3–4 days. Cooked portions can be frozen for about 3 months.
