Description
Pancetta is an Italian cured and aged bacon, with an intense, salty-sweet flavor and a delicate hint of pepper and herbs. It looks like a layered slice of pink-red meat interspersed with creamy fat; when sliced thinly, it has a soft, almost silky texture, and when sautéed, it becomes crispy and aromatic. Nutritionally, pancetta provides protein, B vitamins, iron, and selenium, but it is also calorie-dense and high in saturated fats and sodium, so it is best consumed in moderation as a flavor-enhancing addition to dishes. It pairs wonderfully with pasta (e.g., carbonara), soups, sauces, braised vegetables, salads, and wrapping meats. Store it in a cool place, preferably in the refrigerator wrapped in parchment paper or vacuum-sealed; once opened, use it within a few days, and for longer storage, freeze it for up to about 2 months.
