Salted herring fillets a'la matjas

Description

Salted herring fillets a'la matjas are delicate, soft pieces with a light gray skin and creamy interior, featuring a mild, slightly salty and slightly sweet-buttery note with a subtle hint of the sea. They are prepared with a short salting process, which gives them a velvety texture without the intense saltiness typical of heavily salted herring. Nutritionally, they are a valuable source of high-quality protein, long-chain omega-3 fatty acids (EPA and DHA), vitamin D, B vitamins (especially B12), and selenium, which supports cardiovascular health, brain function, and the immune system; however, intake should be monitored due to salt content and possible fish allergies. Culinary uses include serving with onions, sour cream, oil, or vinegar, as an ingredient in salads, sandwiches, and appetizers, as well as in marinades and cold dishes of Polish and Scandinavian cuisine. Store in the refrigerator in the original brine or submerged in oil in an airtight container at a temperature of 0–4°C; once opened, consume within a few days or freeze, keeping in mind that freezing alters the texture of the meat.
