Sambal oelek
Description
Sambal oelek is a thick, grainy paste made from red fresh chili peppers, salt, and a bit of vinegar, with an intensely red color, fresh-heat, and a slightly sour taste with a distinct chili spiciness and earthy notes. Depending on the recipe, it may also contain garlic or lime, which enhances the aroma. Nutritionally, sambal is low in calories, has minimal fat and protein, but provides capsaicin as well as vitamins A and C and antioxidants. Capsaicin may boost metabolism and have anti-inflammatory effects, but individuals with sensitive stomachs or reflux should use it sparingly, and due to the salt, it's advisable to monitor the amount when on a low-sodium diet. Sambal oelek is excellent for enhancing sauces, marinades, soups, stir-fries, pasta dishes, eggs, and sandwiches, adding heat without overwhelming sweetness. Once opened, store in the refrigerator in an airtight jar, using a clean spoon to prolong freshness; under refrigeration, it maintains quality for several months, and portions can also be frozen.
