Freekeh (green wheat)
Description
Freekeh, also known as green wheat, is young harvested wheat that is roasted and dried, with a distinctive smoky, nutty flavor and a firm, slightly chewy texture, and a greenish-golden hue. It is visually appealing and aromatic, adding depth of flavor and a pleasant consistency to dishes. Nutritionally, freekeh is rich in fiber and protein, providing minerals (iron, magnesium, calcium) and B vitamins, and it has a lower glycemic index than processed grains, which promotes satiety, blood sugar control, and gut health. In the kitchen, it is used in salads, pilafs, soups, fillings, and as a substitute for rice or groats in main and breakfast dishes. The dry product should be stored in an airtight container in a cool, dry place; once cooked, it should be kept in the refrigerator for 3–4 days or can be frozen for longer storage.
