Fresh yeast
Description
Fresh yeast has a delicate, slightly sweet, "bready" aroma and fresh taste; it comes in the form of soft, crumbly cubes or flakes with a light beige color, easily crumbling and dissolving in liquid. It is rich in protein, B vitamins (especially B1, B2, B3, and folic acid), minerals such as selenium and chromium, and enzymes that support metabolism and the proper functioning of the nervous system; as a natural product, it also provides components that aid in tissue regeneration, although it does not replace a balanced diet. It is most commonly used for baking bread, rolls, pizza, sweet rolls, and yeast products, as well as for fermentation in home brewing and baking. Store in a cool place in the refrigerator (0–4°C), tightly wrapped, and use within a few days; it can be portioned and frozen for longer storage, keeping in mind that freezing may slightly reduce yeast activity.
