Description
Bitter chocolate (min. 70% cocoa) is characterized by an intense, slightly tart flavor with distinct fruity or nutty notes, a dark, shiny bar, and a noticeable "snap" when broken. A higher cocoa mass content means less sugar and a more concentrated aroma, which will be appreciated by fans of more sophisticated desserts. Nutritionally, it is rich in cocoa fats, fiber, minerals such as magnesium, iron, and zinc, as well as polyphenols (flavonoids) with antioxidant properties; when consumed in moderation, it may support heart health and improve mood, but it remains calorie-dense and contains saturated fats. It works excellently in baking, ganache, sauces (e.g., mole), as an addition to fruits, cheeses, and beverages.
