Green peas
Description
Green peas have a mildly sweet, fresh flavor and a firm, juicy texture. They stand out with their intense green color and round shape, making them an attractive addition to dishes. They are a source of fiber, plant protein, vitamin C, K, folates, and minerals such as manganese and iron, as well as antioxidants (e.g., lutein), which support digestion, immunity, bone health, and vision while being relatively low in fat. In the kitchen, peas work well in soups, creams, salads, risottos, pasta, and as an accompaniment to meats or vegetables, pairing nicely with mint, butter, lemon, and herbs. Store fresh peas in their pods in the refrigerator for 2–3 days, shelled in an airtight container for 1–2 days; for longer storage, blanch and freeze them, and use frozen peas without thawing or after a brief heating.
