Goose legs

Description

Goose thighs are juicy, dark meat with an intense, slightly gamey flavor and a distinct layer of fat under the skin, which becomes golden and crispy during roasting. They have full, aromatic meat that is perfect for long roasting, braising, or confit, pairing wonderfully with fruits (apples, plums), cabbage, potatoes, and spicy seasonings. This meat is rich in protein and minerals such as iron, zinc, and selenium, as well as B vitamins, especially B12 and niacin, which support circulation and metabolism; at the same time, it contains more fat and calories than white poultry, so it is advisable to consume it in moderation and trim the fat if necessary. Store raw thighs in the refrigerator for a maximum of 1–2 days at a temperature of ≤4°C or freeze tightly for up to 6 months; thaw in the refrigerator.
