Description
Wild mushrooms, such as chanterelles and porcini, have a deep, earthy, and slightly nutty flavor, with a firm, "meaty" texture; chanterelles are light golden and wavy, while porcini have broad brown caps and a sturdy stem. They are low in calories and provide protein, fiber, B vitamins, and minerals like potassium and selenium, as well as bioactive compounds (beta-glucans, ergothioneine) that support the immune system, metabolic balance, and antioxidant protection. In the kitchen, they are great for frying in butter, creamy sauces, risottos, soups, and pasta dishes, as well as for meat and vegetarian dishes; they pair well with onions, garlic, wine, and herbs. Store them briefly in the refrigerator in a paper bag or loosely covered, do not wash before storing, and for longer preservation, dry them or sauté and freeze.
