Small potatoes
Description
Small potatoes are small, round or oval tubers with thin skin and delicate, creamy flesh; they come in yellow, red, and purple varieties, giving them an appetizing appearance and subtly different flavor notes. They have a mild taste, soften quickly, and absorb spices well, making them suitable for both simple and sophisticated dishes. Nutritionally, they are a concentrated source of complex carbohydrates, fiber (especially with the skin), vitamin C, B vitamins, and potassium, with low fat content. Regular consumption supports satiety and energy, positively affects electrolyte balance, and may promote heart and digestive health. Small potatoes are great for baking whole, roasting, cooking for salads, frying, or grilling, and pair excellently with herbs, garlic, and fats. Store them in a cool, dry, well-ventilated, and shaded place, do not wash before storing, keep away from onions, and use within a few weeks, removing sprouts and soft ones.
